La Caciotta Caprina è un prodotto a base di latte di capra, è un formaggio che presente delle caratteristiche organolettiche ben differenti dagli altri formaggi vaccini o di pecora, essi vengono esaltati grazie alla lavorazione del mastro casaro. Una volta ottenuto, il formaggio caprino, viene sottoposto a continue e pazienti cure per consentire una maturazione equilibrata e uniforme. La sua stagionatura è di circa 20/30 giorni.
